Another lighter soup on the menu today. One of the favourites from the takeaway, Chicken & Sweetcorn soup is a delicious simple soup that's a great way to use up left over chicken. Turkey would work well too.

This Indian style curry is delicately spiced and can be as hot or mild as you like. Fantastic as a weekend dish, you could easily make a little more and freeze it for a mid week treat!

The recipe calls for onions and apples to be liquidised to a pulp. The easiest way to do this is with a hand blender or food processor. If you don't have this equipment, simply grating them would also work.

If you like, you can also add a little more veg to the curry. Some chopped courgette and sliced pepper or a handful or two of spinach would all work well.

This dish is another great favourite that is on the table in no time, with very little prep. 

The great combination of chicken, roasted with garlic, tomatoes and peppers in italian seasoning, served on pasta is ideal to heat you up on a February evening!

When roasted, the tomatoes and peppers in this dish char and release a delicious sweetness that really adds to the flavour.

Another winter warmer on the menu today!

This dish combines chicken, broccoli, leeks and pasta in a creamy white sauce.

Most pasta bake recipes use cans of soup to make the sauce, which adds more calories and expense to the meal. Not here! This dish has a simple white cheese sauce that tastes great and would work well served over pasta on it's own.


Chicken Kebabs

These chicken kebabs are a super-healthy, aromatic, tasty midweek dish. Onion, peppers and marinated chicken are combined then grilled/baked together. The chicken and peppers char gently  when cooking to release a slight sweetness that's delicious. The skewers can be baked in the oven or grilled in a regular or slanted grill (like a George Forman or similar).
