Chips are something most people really miss when trying to lose weight. These wedges are a fantastic, lower fat option, that go great with a dollop of ketchup or mayo. They also go well with breaded fish like Donegal Catch.
The recipe below serves 2 people.Ingredients
• 4 cloves of garlic. Peeled and finely chopped
• 3 teaspoons of olive oil
• 400g of potatoes. Washed/scrubbed and sliced into wedges
• 1 teaspoon of corn flour
• ½ chicken or veg stock cube, finely crumbled
• ½ teaspoon of dried garlic granules
• 1 teaspoon of cayenne pepper (less if you don’t like it too spicy)
• 8 sprays of Fry Light One Cal spray oil
• 1 tablespoon of chopped fresh parsley (or dried if it’s late)
• Freshly ground black pepper
Method
- Turn the oven to 220⁰C.
- Add the garlic and oil to a large bowl and mix well.
- Add the wedges to the bowl and mix well. Seal the bowl with cling film and place in the microwave for 3 minutes on full power.
- Carefully remove them using oven gloves or a tea towel and shake well. Place back in the microwave for a further 3 minutes on full power.
- Meanwhile, mix the corn flour, stock cube, garlic granules and cayenne.
- Carefully remove the wedges from the microwave and gently remove the cling film, facing away from you. (Steam usually builds up in the bowl). Sprinkle the powder mixture over the potatoes and mix to coat them well.
- Line a large baking tray with tin foil and spray it with 4 sprays of oil.
- Place the seasoned wedges onto the tray and spread them out well.
- Give them the additional 4 sprays of oil and bake for 35 minutes on the top shelf of the oven (reduce the cooking time accordingly if you have a fan assisted oven, like my Mum). Turn the wedges half way through.
- Divide between two bowls, lined with kitchen paper. Sprinkle with parsley and black pepper, then serve.
