Cinnamon & Nutmeg French Toast

French Toast is a classic breakfast/brunch recipe that is perfect for a weekend. Eggy bread, sweetened and seasoned with cinnamon and nutmeg served with honey on top!

To keep the dish on the healthy side, I recommend you use brown whole meal bread. French toast is also great with some fresh fruit such as blueberries or strawberries on the side. A little 0% Fat yoghurt would also be very nice. 
The following recipe will coat 4 slices of bread and serve 2 people.

Ingredients
• 2 medium eggs, lightly beaten
• 150ml low fat milk
• 2 sweeteners. Crushed with the back of a spoon
• ½ teaspoon of ground cinnamon
• pinch of nutmeg
• 4 x slices of Weight watchers whole meal bread.
• 4 sprays of Fry Light One Cal Spray oil
• a drizzle of runny honey and a little more cinnamon and nutmeg if you like.

Method
  1. Heat a large frying pan over a high heat.
  2. In a wide shallow bowl, mix the egg, milk, sweeteners, cinnamon and nutmeg and stir with a fork or whisk to combine.
  3. When the pan is hot, add the sprays of oil.
  4. Next dip the first slice of bread briefly into the egg mixture. Turn over to coat the other side. Remove from the bowl and allow any excess egg to return to the bowl. Place the bread into the frying pan and repeat with the remaining slices of bread.
  5. After 3-4 minutes, carefully turn the slices to brown the other side and continue to fry for a further 3-4 minutes.
  6. Transfer to warmed plates, slice the bread in half and drizzle with honey and the extra cinnamon and nutmeg if using.
