Apple & Banana Smoothie

Smoothies are a great way to boost your fruit intake and make an ideal breakfast on the go. You could even pop it into a thermos and have as a mid morning snack. Alternatively, it's ideal as a refreshing outdoor dessert that's perfect for picnics or barbecues.  

You can easily increase the fruit content by adding some mixed berries or soft fruit such as peaches or pears. 
This recipe will make one large serving or two small servings.

Ingredients
• 250ml unsweetened orange juice
• 1 x 125g carton of low fat fruit yogurt. Strawberry works well
• 1 eating apple. Peeled, cored and roughly chopped
• 1 banana. Peeled and roughly chopped
• a couple of ice cubes

Method
  1. Add the orange juice and yogurt to a high sided container and mix to combine.
  2. Next add the chopped apple and banana and blitz with a hand blender until smooth.
  3. Next add the ice cubes and continue to blend until the cubes have broken up and serve.

We had these smoothies for breakfast this morning and they were delicious (panel of 8 critics all in agreement). Tried both strawberry yoghurt and natural and strawberry was the winner. Looking forward to trying other variations. Super way of getting both yoghurt and fruit into kids and great start to the day. Thanks.

Glad you and the family enjoyed them! I made them for my Mum using Cranberry juice that also works really well. D ;-)
