Salmon Mousse

This salmon mousse is a great way to make smoked salmon go a bit further. Salmon and low fat cream cheese are combined to make a creamy mousse.

Fantastic served on crackers, Ryvita crisp breads, or even on Butternut Squash Scones it would also work well as a sandwich spread or a topping for a baked potato. 
The recipe will make a small bowl of mousse.

Ingredients
• 40g smoked salmon
• 50g low fat cream cheese, or better still extra low fat cream cheese
• 2 teaspoons of low fat crème fraîche
• a couple of drops of lemon juice
• a good twist of black pepper
• chopped chives (optional)

Method
  1. Roughly chop the smoked salmon and add to a high sided container.
  2. Add the low fat cream cheese and crème fraîche and blitz with a hand blender until smooth. (Alternatively, add the ingredients to a food processor and blitz).
  3. Add the lemon juice, pepper and chives if using and stir to combine.
