Wholemeal Pitta Breads

A little baking today with these delicious wholemeal pittas! As I've mentioned in previous posts, wholemeal options are the best way to go when trying to loose weight or just eat healthier. 

These pittas are a great alternative to bread when making lunches. They would also go great with Kofta Kebabs or Chicken Kebabs.
The recipe will make 8 pitta breads.

Ingredients
• 6 sprays of Fry Light One Cal Spray Oil
• 450g wholemeal flour. Plus more for dusting.
• 1 teaspoon of dried instant yeast
• 1 vegetable stock cube. Crumbled
• 2 teaspoons of olive oil
• approximately half a pint of warm water. (Perhaps a little less depending on the flour).

Method
  1. Line a large baking tray with tin foil and spray with the spray oil.
  2. Add the flour, salt and stock cube to a large bowl and make a well in the centre.
  3. Add the olive oil and stir. Add about half the water to the flour and mix to form a rough dough. Mix in the centre, drawing the flour from the sides.
  4. Add the rest of the water, 1 tablespoon at a time and continue to bring the dough together for another minute or so. If the dough is still a bit too floury add another splash of water, if it's looking too wet, add a little more flour.
  5. Flour a clean board or work surface well and tip the dough onto it. Next dust the top of the dough and flatten it out slightly. Knead it gently to bring it together for about 5 minutes or so. Flour again when kneading.
  6. Using a sharp knife, cut the dough into 8 pieces. (Cut in half, then quarters, then halve these into eights).
  7. Next take one of the pieces and roll it into a ball, then flatten it out. Dust with flour again and roll the dough flat into an oval with a rolling pin. Turn over and dust again regularly. Place on the foil lined tray and continue to roll out the rest of the pittas.
  8. Cover the rolled out pittas with a clean cloth or tea towel and leave in a warm place for 45 minutes to rise slightly.
  9. To bake the pittas, heat the oven to 220°C degrees. When the oven has fully heated, place the pittas at the top of the oven and bake them for 8-10 minutes until crisp and golden.
  10. When done, carefully remove from the oven and wrap the pittas in a clean cloth or tea towel to keep them soft. Allow them to cool fully and store them in an airtight  container.
  11. To serve, pop the pittas into the toaster for a minute to heat through. Slice the pitta down the side, add the contents and serve.
